Millets are a group of small-grained cereals that can grow in harsh climatic conditions and have far superior nutritional properties compared to paddy rice and wheat.

Foxtail, Little, Kodo millets (minor millets) are very similar to paddy rice in their grain structure. They contain an outer husk, which needs to be removed in order to be used. Great, Pearl and Finger millets are similar to wheat in their grain structure. They do not have an outer husk like the minor millets.

Millet protein contains a well-balanced amino-acid profile, and the special nature of its carbohydrates and high fiber-content help lower blood cholesterol, prevent constipation, and aid the slow release of glucose to the blood stream during digestion.  Millets also set the body’s acid-alkaline balance in order and are especially rich in minerals such as sulphur, phosphorus and iron and in important vitamins such as thiamine, riboflavin, niacin and folin. These properties make millets extremely healthy foods that are especially good choices for heart, gastric and diabetic patients.

Millets can be used to make upma, dosa, idli, vada, bajjis/pakoras, murrukus/chakkli, nipatlu, pongal, mudda (dumpling), khichdi, pulav/biriyani, kheer/payasam, baked products such as bread and biscuits, or just boiled as rice, in the same ways that paddy rice and wheat are used.
