Peanuts, or groundnuts, are high-protein legumes that grow well in dry regions. Raw peanuts contain phytochemicals that elicit anti-cancer and antioxidant properties linked to lowering risk of heart disease. They contain a healthy dose of cholesterol lowering monounsaturated fats (50% oleic acid). Just one serving of peanuts (25g) provides 12% of the daily recommended intake of protein.
Peanuts contain several important vitamins and minerals including Vitamin B6, Vitamin E, folic acid, magnesium, copper, zinc and selenium. Research has shown that peanuts may significantly hinder the development of Type II diabetes in women.
With 6.4% dietary fibre content, peanuts are very good for digestion and reduce risk of gallstones. They are rich in antioxidants that slow down aging, and they are a good source of niacin and manganese which can prevent Alzheimer's disease and age-related cognitive decline. Peanuts also provide folic acid, vitamin A, oleic acid and magnesium.

Groundnut Oil (Cold Pressed)
When you read the word 'refined' on a packet of oil, you may assume that it means 'very pure'. But in reality, the process of refining oil involves the use of chemical solvents like hexine.
At Timbaktu Organic, we use the traditional cold pressing method (Ghani) to extract groundnut oil. Cold pressed oil retains its full natural flavor, aroma, and colour, and many naturally occurring nutrients which get lost during chemical refining. Despite common misconceptions about its cholesterol content, groundnut oil is one of the healthiest types of cooking oil available. Groundnut oil contains HDL (High-Density Lipoprotiens), also known as "good cholestrol" , which has been shown to lower the risk of cardiovascular disease. Groundnut oil also lowers bad cholesterol, LDL (Low-Density Lipoprotiens), the type of cholesterol known to cause health problems.
Roasted peanuts can be ground with coconut and green chillies into delicious chutney and eaten with dosa/idli/vada/rice/roti. They can be hand- pounded with red chillies and garlic into podi (powder) and eaten with rice or roti. They can be fried directly with upma, tamarind , lemon and any flavoured rice. Peanuts can be roasted to make a tasty snack, or boiled and mixed with onion, tomato, and chilli to make a delicious salad. For deep frying, peanut oil is ideal as it may be taken to high temperatures without burning and absorbs very little taste or odour, making it suitable to strain and re-use. It is also very good for stir-frying.
